The Perfect Plate program is directed at ensuring that all dishes which leave the kitchens at Hotel Mousai’s restaurants are of the highest quality and best flavor. For example, the program dictates that only the best quality, freshest ingredients may be used, and that the chefs preparing them must be versed in the most up-to-date preparation and presentation methods.

Two safeguards have been put in place to ensure the Perfect Plate program is a success. The first is the constant checking of the freshness, cleanliness, and taste of the ingredients used, and secondly firm and tested preparation and presentation methods set out in a checklist at each workstation. Finally, each day the head chef will prepare a dish each day, presenting it to the staff as a reminder of how it should taste and look.

Perhaps more important than all this, however, is the process by which a dish becomes a part of menu in the first place. Only dishes that pass this process will be considered for the resort’s menus. Finally, even after a dish is on the menu it remains under review; each guest has the chance to leave input on an iPad at the end of their meal, and the suggestions and comments from this process go directly to the chef.
