Antipasto at Hotel Mousai’s Rooftop

Enjoy this delicious healthy recipe from our chef in honor of June Wellness. You can prepare this easily at home or order it while lounging on the Rooftop at Hotel Mousai in Puerto Vallarta. This makes a great appetizer.

Ingredients

  • Mozzarella cheese (alternatives, panela cheese or tofu)
  • Feta cheese
  • Arugula
  • Asparagus
  • Black olives
  • Cured ham
  • Olive oil
  • Capers
  • Large vine ripe Tomatoes (heirlooms)
  • Tomato pesto
  • Basil pesto
  • Parmesan cheese
  • Rosemary
  • Rock salt

Directions

Make a feta cheese and olive oil marinade to accompany the arugula in a bowl adding salt and pepper to taste. Slice the tomato and mozzarella cheese, putting to one side. Lightly cook the tomato slices and asparagus in olive oil taking care to just lightly toast the outside of the asparagus leaving them crunchy inside. Place the tomato slices on a large wooden board with slices of mozzarella on top with a basil leaf or rosemary to finish. Add the the asparagus to the board and drizzle with olive oil and sprinkle with parmesan. Add slices of cured ham and decorate with olives and capers. Accompany with artisan bread and the tomato and basil pesto sauces.
